There are two differing types of Oregon White Truffle. There is the winter Oregon White truffle, and the spring Oregon White truffle. Tartufi Unlimited focuses on the winter Oregon white truffle, being the one of two that is more commercially harvested. The Oregon White truffle ranges in color from a yellowish-white to a brownish-red. The surface of the truffle is smooth, and has a strong garlicky, resin-smell. Oregon White truffles are found under Douglas-Fir trees, in reddish-brown soils. Though Oregon White truffles are usually small, they are very flavor-packed. Unlike European truffles, Oregon truffles are not typically found by animal but by garden cultivator. Because of this, the vast majority of Oregon truffles must ripen once harvested. To ripen, place truffles in refrigerator. The truffles can take anywhere from 1-5 days for this process to occur. To "artificially ripen" or to speed up the process, keep truffles at 43 degrees Fahrenheit in a paper bag. Also, only buy Oregon white truffles after Thanksgiving, for the vast majority of truffles that are plucked from the wild, will not ripen if harvested before Thanksgiving.
