The Burgundy Truffle is essentially the exact species of truffle that the Italian Summer truffle is, however has a later maturation period. The Burgundy truffle ripens between September and December, and looks identical to that of the Summer Black truffle by exterior, but by interior, has a lighter brown tinge. The Burgundy Truffle tastes similar to that of the Italian Summer truffle, but has much more flavor, resulting in a slightly higher price than that of the Summer truffle. |  |
